Target in nuclear research has similar meaning as in darts game (dart board), advertisement (group of people to which the advert is addressed), archery or shooting.
It is an object of various physical and chemical form, of various sizes (see photo at About target) bombarded with charged projectiles provided by accelerators or with neutron flux to trigger nuclear reaction. The target can be as well exposed to x-rays, γ-rays, photons, etc.
